Save the extra cordial you can use for breakfast cocktails, sweets, or to make more rounds of the drink.
The Bikini Cocktail
Yields 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Making the Syrup: Place the listed ingredients into a pan, bring to a simmer, mixing until the sugar dissolves. After that, take off the stove and let it to cool down completely. Decant to a clean bottle, close it keeping it in the fridge, where it will keep for about four weeks.
To make Batch Mix: Combine all the spirits and syrup in a sizeable container, allow it to infuse for 60 minutes, then strain best through cheesecloth, to ensure it's fully clarified.
To serve: Add 85ml of the cocktail base into your stirring glass filled with ice, and stir carefully for one minute to chill. Filter into a cold coupe glass or equivalent, garnish with some cranberries adding the final touch using a quick spritz of mandarin oil over the drink.
